Why does the ingredient matter for cup-to-gram conversion?

Because a cup measures space, not weight. Flour packs at about 0.55 g/ml, sugar at 0.85, honey at 1.42, so the same cup holds 130 g of flour but 340 g of honey. Any converter that gives one answer for "1 cup in grams" without asking the ingredient is guessing.

How big is a katori, really?

There is no official standard: household katoris run 120-200 ml. This tool uses 150 ml as a working average, which suits standard steel katoris. If your kitchen uses a specific bowl for portioning, measure it once with water and stick to that number.

Are US and UK cups the same?

No. A US cup is 240 ml (technically 236.6), a UK/metric cup is 250 ml, and an Australian tablespoon is 20 ml versus the 15 ml used almost everywhere else. This tool uses the US-standard 240 ml cup and 15 ml tablespoon, which is what most published recipes mean.
