Is this fee estimate exact?

No, treat it as a planning figure. The exact category can also depend on business type (manufacturer, importer, caterer, restaurant), not turnover alone, and states can apply their own procedural variations. Always confirm the final category and fee on the FoSCoS portal before applying.

How long is an FSSAI license valid?

You can apply for 1 to 5 years of validity in a single application, paying the per-year fee multiplied by however many years you choose, longer validity means fewer renewal cycles to track.

What happens if I operate without a valid FSSAI license?

Operating a food business without registration or license, or with an expired one, exposes you to penalties under the Food Safety and Standards Act, and can result in the outlet being shut down during an inspection. It is worth renewing well before expiry rather than after a lapse.
